
The Porch Swinger
We created the Porch Swinger at Hope & Olive so far back, we cannot remember its derivation. I put it together and pictured it being the perfect beverage for sitting on the front porch swing in some Southern gothic drama. The original was simply muddled mint and cucumber with fresh lemon juice topped with soda. Since its inception, we have been juicing whole cukes, and straining, for a great, but very perishable, cucumber juice. We need to produce it almost daily. We also developed a simple mint syrup. The process of blanching and blending the mint with a batch of simple syrup is not a simple process, however. When done incorrectly—steeping the mint too long in the hot water before chilling—you can easily end up with a compost-flavored, brown mint syrup. Two of our staff have this process nailed, resulting in a perfect, bright-green color and fresh mint flavor. I am not one of them.

Ingredients
FOR THE MINT SIMPLE SYRUP
- 7 whole stems fresh mint (about 70 leaves of mint)
- 12 ounces cold rich simple syrup (1.5-to-1 ratio sugar to water)
FOR THE DRINK
- 1 ounce mint simple syrup
- 1 ounce lemon juice
- 1 inch peeled cucumber
- Soda to top
- Mint, cuke, or lemon garnish
Instructions
TO MAKE THE MINT SIMPLE SYRUP
- Bring a large pot of water to boil as you prepare an ice water bath.
- Blanch mint leaves for 10 seconds then shock immediately in ice water for 1 minute. Pat leaves dry on a towel.
- Pull all leaves from the stems, and then blend with the simple syrup on high for 1 minute.
- Run through a fine-mesh strainer, and bottle. Store refrigerated for up to 1 month.
TO MAKE THE DRINK
- In a 16-ounce pint glass or cocktail shaker, combine mint syrup, lemon juice, and cucumber. Muddle the cuke, add ice, shake, and strain into an ice-filled glass. Top with soda. Garnish with mint, cuke, or lemon.
- To make it boozy (what we call the “Greenhouse Collins”), use the same drink specs and method with the addition of 2 ounces of vodka (or gin, or tequila). Reduce the amount of soda, and serve in a smaller, 12-ounce Collins glass.
Notes
You can substitute fresh mint and an ounce of simple syrup to avoid the need for a mint syrup.
